On the 5th generation of the Honda Odyssey, You'll find that You'll be able to remove not just the third row of seats, but also the second row. To do so, You'll first need to remove the center seat. You can do this by folding the back of the seat forward into the "armrest" position, then pull the release lever located near the ground on the middle seat. Once this is gone, You'll be able to remove each of the other two seats if You so desire. To do this, You'll first need to fold the seat forward (by pulling the unmarked middle lever on the outside of the seat). Then, once the seat is folded, pull the front removal lever to remove.

Removing the seats from a honda odyssey is relatively easy to do. There is a lock release lever behind the back of the seat. Pull up on it and lift the rear seat to release it from the locking mechanism. Then, just pull it backwards until it comes completely free from the floor.
